When I got COVID, I couldn’t remember what I ate the first three days, all I know was that Biswa was the kitchen in charge. On day four, when I entered my kitchen, these are the things I found in the fridge: one Ruti/ Roti, a small bowl of Sabzi, some leftover cooked Moong daal and cooked rice in the fridge. But that was not enough for two. Also, I had some pre-cut vegetables in the freezer.
Both of us were super tired; cooking one complete meal was difficult! Also, Biswa was doing his office.

So this is what I did for Jugaad.
1. Spread the Sabji onto the roti, add some tomato, and chilli sauce, put some grated cheese and fold the roti and toast in a sandwich maker.
2. I added oil to a cooking pan. Once the oil was hot, I put dry red chilli and onion seeds, and then after a few seconds, I added all the veggies, salt, turmeric powder, and green chillies into the pan. Over high heat, cooked for a few seconds and then finished the cooking process on low heat. Once done, transfer the vegetable into the serving bowls.
3. Into the same cooking pot ( no need to wash), I added Daal, cooked rice and poured some boiling water, adjusted the salt and sugar, and allowed them to simmer for 2-3 minutes. Drizzled fresh ghee on the top and served.

I really wanted to document our #covidfooddiary because not only were my meal prep habits saviour, but I must say Biswa is becoming a pro in home cooking! Last but not least, I am thankful to my friends; despite their health challenges, they put the effort to cook some comforting, delicious meals for us!
