Tomato khejur amsatta chutnye

Serves: 3-5
Prep time: 15 minutes approx
Cook time: 15 minutes

Ingredient:

  • 4 medium size Golden delight/ Russet potatoes washed cleaned and skin on.
  • 20 -25 peanuts
  • 10-12 curry leaves
  • Enough oil for deep frying
  • Black pepper powder to taste
  • Black salt to taste
  • Chaat masala powder

Process:

Type one - deep frying,

  1. Cut the potatoes into julienne shape with the help of knife or Food processor.
  2. Soak the potatoes in cold water for at least 15 mins, then wash them 2-3 times, squeeze potatoes as much as you can to drain water and place them on a paper towel to dry.
  3. Bring the oil to high temperature, then reduce the heat to low.
  4. If you are using raw peanuts, then first cook them over low heat for few seconds and remove from oil, place on a paper towel.
  5. Add curry leaves, cook for few seconds and remove from oil.
  6. Take a small portion of potatoes, squeeze again to make sure potatoes are completely dry, then add in the hot oil, continue cooking over medium to medium-low heat for a couple of minutes ( time will vary depending on quantity), until they develop golden brown colour.fry them in batches.
  7. Take them out from oil and place on a paper  towel, add salt and pepper, peanuts and curry leave.

Type Two: Baking,

  1. Preheat your  oven to 160 degrees C or 320 degrees F ( fan forced)
  2. Apply oil to your baking sheet and preheat the baking sheet too.
  3. Take a small portion of potatoes, squeeze again to make sure potatoes are completely dry, then spread them on your baking sheet in a single layer.
  4. Apply some hot oil on top, give a good mix and spread again in a single layer.
  5. Pop the tray in the oven for 12 minutes, then take it out, turn the other side and put it back in the oven for another 4-5 mins.
  6. Turn off the heat, keep the tray in the hot oven for another 4-5 mins, then take it out from oven, add curry leaves and peanuts. Let them completely cool and keep in an airtight container.
