Bengali Cucumber Tomato Salad

According to me, Bengali Cucumber and Tomato Salad is the easiest salad to make. Few years back  because of my health issue, I had to follow a cleansing diet for 15 days  and I used to eat oil and salt-free salad as my meals and fruits as my snacks ,then  I started to eat my regular food,  where my each meal has to be 300calories. During summers every day I used to make this salad as my side along with my mix vegetable sabzi/ curry. So that I could include a big portion of vegetables to my meal and trust me I enjoyed it thoroughly.

You can add cooked chicken or boiled eggs to this salad and enjoy it as a meal itself. You can pair this salad with spicy fish fry, chicken kosha, fish chop or deviled egg.

Serving: 2

Ingredients:

  • 1 cucumber cut into cube
  • 8 cherry tomatoes halved
  • 1 tsp of chopped red onion or shallot
  • 1 tbsp. of chopped coriander leaves/ cilantro
  • 2 green chilies chopped

For dressing:

  • 1 1/2 tbsp. lemon juice
  • 1/4 tsp of freshly ground black pepper
  • 2-3 fat pinch of black salt
  • Salt to taste

Note: Add a pinch of Sugar if you wish.

Process:

Transfer everything to a mixing bowl and give a stir to mix  everything together, cover with a wrap and place in the refrigerator at least for half an hour.

Serve with your meal as a side.
