Vegetable Pulao cooked in a pressure cooker

This colorful, aromatic Vegetable Pulao is  a great and easy weeknight wonder, which one can enjoy with roasted papad, raita. so easy to make and much better than takeouts.

Once you have cut vegetable in your refrigerator, it might be frozen vegetable too! But  most of the time  I try to  cut and prep some vegetables before hand so that during the week when I am  running short of time, it's really come in handy and I am able to  eat a good home cooked  meal.

Sometimes I  try to make some extra veg or non-veg dishes  like Aloo dum, Chicken kosha, Kosha mangsho for the weekend special menu,the leftovers  which can be paired with this pulao for weeknight dinner and I will have a wholesome meal to feed the family.

Serves: 4-5



  • 2 cups Basmati rice washed and soaked in water for 30 min, then  drain the rice and spread on a sieve.
  • 1/3 cup  or 5-6 chopped beans
  • 1/3 cup fresh or frozen peas
  • 1/2 cup  or 1 small chopped carrots
  • 1/2 cup  or 2-3 cauliflower florets
  • 1/3 cup of cubed potato
  • 2 red onions sliced
  • 2 tsp finely chopped ginger
  • 10-15  cashews
  • 20 raisins
  • 4 green chillies

For tempering,

  • 1  big bay leaf or 2 small bay leaves
  • 3 -4  green cardamoms
  • 6 -8 whole black pepper
  • 4 cloves
  • 1 bark cinnamon
  • 1 star anise
  • 4 allspice
  • 2 tbsp. vegetable oil
  • 2 tbsp. ghee
  • Warm water 3 ½  cups
  • salt to taste
  1. Transfer the rice to a bowl, add salt , Ghee and mix everything together.keep aside.
  2. Add oil in a pressure cooker and heat the oil over medium heat.
  3. Add cashew ,raisins and fry for few seconds to develop a golden colour and remove from oil.
  4. Add tempering and stir for few seconds until fragrant.
  5. Add sliced onion , sprinkle salt just for the onion and over medium heat fry to develop an amber or golden colour. It will take approximately 10-12 mins.
  6. Add chopped ginger, stir and cook for few seconds, when the raw smell of ginger has gone, add vegetables, sprinkle salt for vegetables and cook for few minutes, about 3-4 minutes.
  7. Add in rice, give a stir to mix rice and vegetables and absorb the flavor, continue cooking for 4-5 minutes, that way rice  will be  fluffy.
  8. Add fried cashew and raisins., give a gentle stir again to mix everything together.
  9. Add warm water and bring the heat to high , let the mixture comes up to a boil.
  10. putting the lid on and wait for 2 whistles.
  11. Turn off heat, if you are cooking on electric oven then transfer the cooker  from the hot oven and keep on a cooling rack and allow all the pressure release all by itself. Then open the lid, transfer the pulao on serving plate and enjoy!
