Bengali Vegetable khichuri

During colder months I love to make one -pot meal and this Bengali style vegetable khichuri is one of them. The great thing is that it takes hardly 5 minutes active time for prep work and 20 minutes to cook the dish which is packed with lots of flavors and plant-based protein! the easiest homemade Indian one pot meal ever.

Serves: 4-5

Ingredients:

  • 1 cup rice
  • 1 cup moong daal (lentils)
  • 8 cauliflower florets
  • 1 medium size potato
  • 1/4 tomato (chopped)
  • 2 tsp grated ginger
  • 1/4 cup peas
  • 1 green chilli
  • 2 tbsp. mustard oil /vegetable oil
  • 1 tsp ghee
  • Salt and sugar to taste

For tempering:

  • ½ tsp cumin
  • 3 cardamoms
  • 1 tiny cinnamon stick

For masala:

  • 1 tsp cumin powder
  • 1/2 tsp red chilli powder

1/2 tsp turmeric powder

Process:

  1. In a preheated skillet or pan, add moong dal and roast it till light brown.
  2. Wash roasted dal and rice together under cold water, drain water.

Note: for the better result, after washing soak the rice and dal mixture into the water for at least 30 minutes, then drain water.

  1. Fill a large pot with about 5 cups of boiling water or fill the pot with 5 ½ cups of water and bring to a boil.
  2. Add washed rice dal; sprinkle a generous amount of salt and turmeric powder.
  3. Give a good mix with the help of a spatula; over high heat bring it to boil.
  4. Once it starts boiling, then turns off the heat and cover with lid.
  5. In a large pot heat some oil, add all tempering then stir for few seconds, after that add chopped ginger and stir again for another few seconds to bring the aroma from whole spices and herb.
  6. Add potatoes, cauliflowers, sprinkle salt and stir around for about 4 to 5 minutes or until vegetables are half cooked.
  7. Add chopped tomato, green peas, cumin powder, red chilli powder and a little bit of water. Cover with lid and allow to cook over medium-low heat.
  8. Add chopped green chilly now if you want heat, or else add at the end of cooking just for flavour.
  9. Add cooked rice and dal mixture to the spiced vegetable; add water about 1 or 1 ½ cups, ghee and sugar. Then stir well to mix everything together.
  10. Turn off the heat, cover with a lid and give 10 to 15 minutes standing time before serve.

Enjoy with an omelette or your favourite fries.
