Bengali Fried Rice

Bengali fried rice also known as vegetable pulao, a colorful rice recipe inspired by Chinese fried rice.

Ingredients:

  • 1 ½ cup Basmati rice( washed and soaked in water along with ¼ tsp of vinegar or lime juice for about 30 mins, then drain it)
  • ¼ cup green peas
  • ¼ cup corn
  • ¼ cup beans
  • ¼ cup carrots
  • ¼ cup red capsicum
  • ¼ green capsicum
  • ¼ cup sliced red onion
  • 3 tsp ghee
  • 2 Tbsp. white oil
  • For tempering:
    • 2-3 bay leaves
    • 4 green cardamoms
    • 3-4 cloves
    • 2 tiny sticks of cinnamon
    • 1 small fleck of mace
    • 1 tsp Ginger julienned
  • For seasoning:,
    • 1/8 tsp nutmeg powder
    • 1/8 tsp white pepper powder
    • 4-5 black pepper
    • 1-2 chopped green chilli/ chillies
  • 1 tsp sugar( or according to taste)
  • Salt to taste

Process:

  1. Marinade the rice with ghee and salt.
  2. Fill a medium size saucepan or cooking pot with 3 cups of water, place the pan on the stove over high heat, add 2-3 cloves, 1 bay leaf, a tiny bark of cinnamon and 3-4 black peppercorn and bring it to a boil.
  3. Reduce the heat to medium, add the marinated rice in the boiling water, give a stir and wait until the water comes up to a full boil, then turn off the heat, cover with lid, the cooking process will continue all by itself.

Note: For best result, you can prepare the rice one night before, when it’s cooled, transfer it in a container and put in the refrigerator.

  1. Leftover cooked Basmati rice is also a very good option.
  2. Place a wok or large frying pan over high heat, heat up some oil and then add ghee.
  3. Add all seasoning to the hot oil mix and give a stir for few seconds to get all extract from the whole spices.
  4. Add sliced onion, sprinkle pinch of salt and cook 2-3 minutes to soften the onion.
  5. Add beans and carrots continue cooking over high heat to soften the vegetables, but they should be crunchy.
  6. Add peas, cashews, raisins, green chillies, black pepper, nutmeg powder, white pepper, salt and sugar. Give a good stir. 
  7. Add cooked rice and give a good mix with the help of your spatula. Enjoy!!!
