Roasted Chicken with fried bell pepper

Roasted Chicken with fried bell pepper Recipe by Foodie's Hut

Serves: 2-3
Prep Time: 10 minutes + marination 2 hours
Cook Time: 50 minutes

• 6 pcs Chicken drumsticks
• 2 big Garlic chopped
• 1 tbsp. Coriander powder
• ½ tsp red Chilli powder
• 1 tsp Kashmiri red chili powder
• ½ tbsp. Italian seasoning
• ½ tsp dry Thymes
• 2 tbsp. Balsamic vinegar
• 1/3 cup of Olive oil
• Salt to taste
• Black pepper
• 5-6 whole cloves of Garlic unpeeled
• 1 lemon cut in half, then cut one-half into quarter
• 4-5 medium size potatoes quartered
• 2 Bell Peppers (red and yellow) cut into long strips.
• 1 big red onion sliced
• 1 big clove of Garlic chopped


  1. In a mixing bowl whisk together chopped garlic, coriander powder, 2 types of chilli powder, Italian seasoning, dry thymes, olive oil, vinegar, salt, pepper, add chicken and make sure Chicken is well coated, cover with wrap and keep in the refrigerator for at least two hours, longer marinating time is better.
  2. Preheat your oven 450 degrees F or 230 degrees C.
  3. Allow the Chicken to rest at room temperature for at least 15 minutes, whack the unpeeled garlic and add to the marinated Chicken along with potatoes, half of lemon juice. Give a mix and transfer the marinated mixture to the roasting pan, add quartered lemon wedges and roast for 50 mins or until chicken is all way cooked through.
  4. When your Chicken is half way cooked through, start to fry onion and bell peppers,
  5. In a pan add ¼ cup of olive oil and chopped garlic, let it hot.
  6. Add sliced onion, sprinkle some salt and over medium heat cook until onions are softened, add bell pepper, sprinkle black pepper, an additional amount of Italian seasoning, continue cooking for another few minutes. (Cooking time vary depending on quantity, to cook this amount it will take approx. 15 minutes) Then transfer in on a serving plate.
  7. Place roasted chicken pieces and potatoes on the bed of fried bell pepper and Enjoy!!!
