Cook time: 5 to 7 minutes
Serve: 2 to 3

Ingredients:

  • 4 Eggs
  • 1½ cup chopped onion
  • 2 tsp chopped ginger
  • 1 cup red capsicum
  • 1 cup frozen mixed vegetable
  • 1 tbsp chopped tomato
  • 2 medium sized chopped green chili
  • A bunch of coriander leaves
  • ½ tsp turmeric powder
  • Salt to taste
  • 2 tbsp mustard oil(optional, you can use vegetable oil too)

Process:

  1. Add oil in a wok or nonstick pan and preheat over high heat, reduce the heat to low .
  2. Add all veggies at once, increase heat to medium.
  3. Add salt and  turmeric powder,fry for 4 to 5 minutes, or until veggies 80 % cooked.
  4. Add  eggs into the veggies using a wooden spatula constantly move eggs,it will take couple of minutes to cook eggs.
  5. Add chopped coriander leaves and green chillies, cook for further 2 to 3 minutes.
  6. Serve hot.
