Chilli Chicken Bites

Serves: 4-5
Prep Time: Active time 10 minutes + marination time 15-30 minutes
Cook Time: 30 minutes maximum

Ingredients:

  • 500 gm chicken thigh fillet cleaned, washed and cut into bite size pieces.
  • 2-3 cups panko bread crumbs
  • Oil for deep frying

For marinate:

  • Make a paste with,
  • 3-4 dry red chillies soaked into warm water for 15 minutes
  • 3-4 garlic cloves
  • ½ inch / 6 gm  ginger root peeled
  • dry roast and grind,
  • ¼ tsp cumin seeds
  • ¼ tsp fenugreek seeds
  • ½ tsp coriander seeds
  • 3-4 cloves
  • salt to taste

Process:

  1. In a mixing bowl add ground spices, the paste, salt and chicken pieces, mix everything together, cover with plastic wrap and put into the refrigerator for about 1 hour.
  2. Fill a heavy duty dutch oven or big saucepan with oil and heat it up over medium heat.
  3. Place breadcrumbs on a plate, season with salt and roasted spice mix.
  4. Dredge chicken pieces to the breadcrumbs, then over medium heat add chicken pieces one by one, do not overcrowd and fry for few minutes until chicken cooked through.
  5. Remove from oil and place on a paper towel lined plate.

Serve hot with your favourite ketchup.
