Chicken Kosha

Bengali Chicken kosha - is an intensely flavoured curry  dish that is slow cooked  until meat is tender.

Chicken Kosha or Chicken  bhuna is a popular Bengali curry that is very easy to make and  taste delicious with Fried rice, Basanti Pulao, Luchi, Paratha or with simple steamed Basmati rice and with  a bowlful of  Salad.

The active time for this recipe is really very short, the recipe takes a bit of longer cook  time as you want to cook the meat really slowly to get soft and melt in the mouth.

Prep time : 10 minutes
Cook time : 30 minutes
Serves : 4-5

Ingredients:

  • Bone in skin off  Chicken 1 kg
  • One red onion 150 gm( medium size)
  • One medium size tomato approx 120 gm
  • Ginger 17 to 20 gm
  • 3 big cloves of Garlic (20 gm)
  • 2 Bay leaves
  • 4 Cardamom
  • Less than 1 gm Cinnamon stick
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/4 tsp red Chili powder
  • 1 tsp Turmeric powder
  • Mustard oil approx 3 tbsp
  • Sugar ⅛ tsp
  • Salt  according to taste

Process:

  1. Cut  half Onion into finely Sliced.
  2. Make a paste with half of Onion, Ginger, Garlic,tomato, 2 cardamom and little bit of Cinnamon.
  3. Marinate Chicken with this paste, all powdered spices and half of Oil.
  4. Keep aside for one hour or into Refrigerator .( until this one can done one night before)
  5. In a heavy bottomed pan heat rest of oil,add  Sugar and let it melt.
  6. Add rest whole Spices,give a stir for few seconds.
  7. Add Sliced onions and over medium heat fry them, until they turn golden brown color.
  8. Add marinated Chicken, mix well and cook over high heat for few minutes.
  9. Then cover the  pot with lid, reduce heat  into absolutely low  temperature of your stove and cook for approx  20 -30  minutes or until chicken cooked through.
  10. Give stir for few time, so that Chicken or spices do not sticked to bottom of Pan.
  11. when Chicken cooked through, increase heat of your stove and cook for 3-4 minutes, then turn off heat and cover with lid.
  12. Before serve give some standing time, it will help to develop nice reddish color into curry.
