Roasted yellow Moong lentils and vegetable dal

Prep time: 10 minutes
Cook time: 15 minutes
Serves: 4

Ingredients:

  • ½ cup yellow  moong lentils
  • ⅓ cup of frozen peas
  • 1 cup of cauliflower
  • ¼ cup of carrots
  • 1 green Chili slit
  • ½ tsp Ghee
  • ½ tsp.cumin powder
  • ½ tsp ginger paste
  • ½ tsp turmeric powder
  • oil 1 ½ Tbsp
  • salt to taste
  • 2 to 2 ½ cup of water. 

For tempering:

  • 1 dry red Chili
  • 2 small Bay leaves/1 big leaf
  • ¼ tsp cumin seeds
  • 3 cloves
  • 2 green cardamom
  • 1 small cinnamon stick

Process:

  1. Add lentils in a nonstick pan, over medium heat dry roast for few minutes, about 2 3 minutes or until it changes color to golden brown, rinsed well.
  2. In a saucepan fill 1 ½ cup  water, add lentils and salt and bring to boil.
  3. Reduce heat to  simmer lentils for about 10 to 15 minutes, or until soft and tender.
  4. In a frying pan heat oil and add all tempering, wait few seconds, add vegetables one by one, salt and turmeric powder, cook them for few minutes,until vegetables are tender.
  5. Add all spices, green chili and about 2 Tbsp water, cook for 3 4 minutes, until oil separating from veggies.
  6. Add vegetables, ghee and water into dal,cover the lid and let it simmer for 2 minutes.

Serve hot !!!
