Peas Stuffed Fried Bread (Karaishutir Kochuri)

Karaisutir Kochuri/ Peas Kochori and Aloor Dom is a very famous breakfast in Bengali cuisine. Kochuri or Kachori is an Indian popular deep fried bread usually served with spicy Potato curry. During winter holidays, I love to make these bread for breakfast. In this video, I have shown if you are making the dish for a party, how can you prepare, roll out and freeze the Kochuris in advance, you can do these prep work at least a week ahead. Then all you to need to do, on the day of the party, take them out from the freezer and bring to the room temperature, then fry and serve hot.

Ingredients :

for dough : (15 kachoris)

  • 2 Cups Plain flour
  • 1/4 cup Wheat flour 
  • 3 Tbsp white Oil
  • 1/2 tsp Salt
  • 1/2 tsp Sugar
  • Water

for Filling :

  • 2 cups Green Peas 
  • 5 gm Ginger
  • 2 green Chilies
  • 2 Tbsp white oil

for seasoning :

  • 2 tbsp cumin seeds
  • 2 bay leaves
  • 1 dry red chili
  • For Tempering
  • 1/4 tsp fennel seeds
  • 1/4 tsp Hing(asafoetida)

and we need...

  • salt & Sugar to taste
  • enough oil for deep frying


for dough,

  1. In a mixing bowl add all ingredients for dough, give a good mix, then add water little by little and knead them to make a dough, cover with a damp cloth or cling wrap for 30 minutes.
  2. Divide dough into equal 10 to 15  balls.

for stuffing,

  1. In your food processor add peas, green chili and ginger and coarsely grind them.
  2. over medium high heat, in a nonstick pan, heat oil, add Fennel seeds,give a stir for few seconds to get aroma , add Asafoetida and peas paste.
  3. Add Salt and Sugar,cook over medium to medium high heat for about 7 to 8 minutes to remove moisture from the mixture.
  4. Add roasted spice mix powder and mix well.
  5. Remove the mixture from heat pour into different plate,let it completely cool.
  6.  Make  10 to 15 smaller balls  than dough balls. 

for rolling,

  1. take a dough ball,by using rolling pin flat it set one peas ball into it,cover with dough and roll it.
  2. Repeat same process for rest.( check video)

for frying,

  1. In a heavy bottomed pan heat oil for  deep frying, add one kachori at a time, by using ladle give a gentle push to kochori, this will help to puffed it.
  2. Fry until it trn into golden color.
  3. Remove from oil.
  4. Serve hot.
