Cheesy Chicken Sandwich

A quick Chicken sandwich recipe for lunch or brunch.

Serves: 2


  • 4 slices of Whole Wheat Bread / White Bread
  • 2 cups cooked and shredded Chicken

(If you have leftover cooked or grilled chicken you can use them for this recipe, otherwise, take a cleaned and washed boneless chicken thigh or breast fillet, In a saucepan add water, and little bit of salt, I prefer to add some regular Bengali whole Garam masala to the water for flavour. When the water starts boiling add chicken fillet, bring the temperature to medium heat, partially cover with a lid and let it cook, until the meat is cooked through.)

  • 1 cup shredded Mozzarella Cheese
  • 1 tsp Ginger paste
  • 1 tsp Garlic paste
  • 1 tsp Ground Black pepper
  • 1/4 tsp. Sugar
  • Salt to taste
  • Butter for spreading
  • 2 tsp Vegetable oil


  1. Add oil in a medium saucepan or cooking pan, heat the oil over medium heat.
  2. Add ginger and garlic paste and stir for few seconds to remove the raw smell from the mixture.
  3. Add cooked Chicken, salt, sugar and ground black pepper, over medium heat allow it continue cooking for 2-3 minutes so that chicken can absorb all flavours and well-seasoned. Then remove from heat.
  4. To make each sandwich lay 2 pieces of bread on your working surface and spread a thin layer of butter on them.
  5. Take one piece of bread, top that with shredded cheese (about 2 tbsp.), followed by cooked chicken, then top again with shredded cheese, this will help to hold the sandwich and then place the other bread on top, set aside. Repeat the same process for the other one.
  6. Preheat your electric sandwich maker or a skillet over medium heat.
  7. Apply a little bit of butter, it will act like grease.
  8. Place the sandwiches in the hot skillet and cook for 2-3 minutes on each side or until the outer side is lovely golden colour and cheese is fully melted.
